Recipe For Nursing Mommas!

Ok, sweet ladies! A few of you have requested this recipe, so here it is! It's delicious, by the way!  I used whole wheat flower and PLENTY of chocolate chips... in my case, dairy free ones.  I hope y'all enjoy! 

1 cup butter
1 cup brown sugar
1/2 cup white sugar
4 tbsp water
2 tbsp flaxseed meal*
2 large eggs
1 tsp vanilla
2 cups flour (if using whole wheat, use 1 1/2 cups instead)
1 tsp baking soda
1/2 tsp cinnamon (I didn't use this much...)
1 tsp salt
3 cups oats, thick cut if you can get them
1 cup or more chocolate chips(raisins are good in here too)
2 tbsp Brewer's Yeast*(be generous)

Preheat oven at 375 degrees F. Mix together 2 tbsps of flaxseed meal and water, set aside for 3-5 minutes. Cream butter and sugar. Add eggs one at a time, mix well. Stir flaxseed mixture and add with vanilla to the margarine mix. Beat until blended. Whisk together dry ingredients, except oats then chips. Add to butter/margarine mixture. Stir in oats, then chips. Scoop or drop onto baking sheet, preferably lined with parchment or silpat. The dough is a little crumbly, so it helps to use a scoop.

Bake 8-12 minutes, depending on size of cookie. (I baked for 8 minutes max)

Serves: 6 dozen cookies

Preparation time: 15 minutes (ummm.... NOT with a baby. try more like 45 =)

*can be found at any local health food store

*NOTE* IT MUST BE BREWER'S YEAST, NO SUBSTITUTIONS!!
